This sugar free (had to come back and edit this part…..I say sugar free, because I’m not adding any *refined sugar* so there is natural sugar, from the fruit in this dessert… beware…ha ha) dessert has become our favorite this summer! I thought I would share it for all you moms out there looking for something simple, healthy, and that you’re kids will love- enjoy!!
Banana Ice Cream
4 frozen bananas (cut into small rounds)
1/2 cup of coconut milk
1 teaspoon of vanilla (sugar free if you can find it)
Place cut up banana rounds on a wax paper covered plate and freeze completely. When you’re ready to make the ice cream, take them out and place them directly into your blender. Add half of the coconut milk, vanilla, and blend. Continue to add the rest of the coconut milk until desired consistency.
NOTE- Sometimes I have to add an entire cup of coconut milk, but make sure you stir a few times in between blending and adding milk because it can get very thin, very fast if you don’t! You can enjoy right away, or freeze and enjoy later!
We also like to stir in chopped peaches, or strawberries, and sometimes dark chocolate chunks and peppermint essential oil, for a mint chocolate chip flavor!
